Restaurant lighting has a harder job than domestic lighting and a much narrower margin for error. It has to make food look right, make people look right, let staff work safely, survive being cleaned every night for ten years, and produce a specific feeling that matches what you are charging. A living room only has to be pleasant.
It is also one of the few design decisions in a venue that customers notice without being able to name. Nobody leaves a review about the lighting. They leave a review saying the room felt cold, or the food photographed badly, or it was somewhere they wanted to linger.

Start by zoning the room
Domestic lighting is planned room by room. Commercial lighting is planned zone by zone, because a single space contains areas with completely different requirements.
A typical restaurant has five:
- Entry and waiting. Brighter than the dining area. This is where people adjust from outside light, read a menu board, and form a first impression. Underlighting the entrance makes a venue feel closed.
- Dining. The lowest light level in the room, and the most carefully controlled.
- Bar and counter. Brighter than dining, because it is a work surface, and usually the visual anchor of the room.
- Circulation. Aisles, stairs, the route to the toilets. Safety-critical and usually neglected.
- Service and back of house. Bright, functional, high colour accuracy so staff can check plates before they leave the pass.
Each of these wants its own circuit. A venue where everything is on one switch cannot change through the day, which is the single most useful thing restaurant lighting can do.
Light levels by zone
Rough working figures, in lux, measured at table height:
- Fine dining, evening: 50–100 lux. Deliberately dim. Diners should be lit more than the room.
- Casual dining and bistro: 100–200 lux.
- Café, daytime: 200–300 lux. People read, work and meet in cafés, and 80 lux is unusable for that.
- Bar and counter: 150–300 lux on the working surface.
- Circulation and stairs: 100 lux minimum, more where there are level changes.
- Kitchen and service: 500 lux, and this is often a regulatory minimum rather than a preference.
The critical principle is contrast, not absolute level. A dining room feels intimate when the tables are lit and the space between them is not. Lighting the whole room evenly to 100 lux produces something gloomy; lighting the tables to 150 and the surrounds to 40 produces something atmospheric. The difference costs nothing extra and is entirely about where the fixtures point.
Pendant heights over tables
The domestic rule is 30–36 inches from tabletop to fixture bottom. In a restaurant, go slightly lower — 28 to 32 inches — where the pendant sits over a fixed table.
Lower pendants create a defined pool of light per table, which is what produces the sense of separate territory that makes diners comfortable. It also keeps the light source below the general sightline across the room, so you are not looking at twenty bare bulbs when you scan the space.
Two constraints. Staff have to reach across tables to serve, so anything under about 26 inches becomes an obstacle. And if the venue rearranges tables for large parties, fixed pendants become a planning problem — in that case, track or adjustable fixtures are more practical than a fixed grid of pendants.

Opaque metal shades push light straight down onto the table and keep the source out of diners' eyes across the room. That directionality is what creates separation between tables.
Colour temperature and why food photography depends on it
Stay warm. 2200K to 2700K for evening dining, up to 3000K for cafés and daytime venues. Above 3000K, food starts to look grey and unappetising, meat in particular.
Colour rendering matters more here than almost anywhere. CRI 90 or above should be treated as a minimum specification for any fixture lighting food or people. Below that, reds are under-rendered, which affects meat, tomatoes, wine and skin tone simultaneously.
There is a commercial argument attached to this. Customers photograph food and post it, and a phone camera is unforgiving about poor colour rendering. A dish that looks superb on the plate and muddy in a photograph is a marketing problem, and it is caused by the lighting rather than the kitchen.
Consistency across the room is equally important. Mixed colour temperatures look careless in a way that reads as cheap even to people who cannot identify the cause. Specify one temperature and hold it across every fixture, including replacements bought two years later.
Glare, which is what separates a professional job from a domestic one
The most common failure in restaurant lighting is a bright source in the diner's field of view. It is uncomfortable, it makes the rest of the room look darker by contrast, and it is very hard to fix after opening.
Three defences:
Shield the source. Opaque or deeply recessed shades keep the lamp out of sight from a seated position. Exposed filament bulbs look wonderful in photographs and are frequently unpleasant to sit under for two hours.
Aim accurately. Adjustable spots and track heads should be aimed at tables and surfaces, never across the room at eye level. Aim them after the furniture is in, not before.
Check from a seated position. Before signing off an installation, sit in every seat in the venue and look around. Designers stand; customers sit. Problems only visible from a chair are invisible during the fit-out and obvious on opening night.
The bar as the visual anchor
The bar is usually the most visible element from the door and deserves the most decorative fixture in the room.
Practically, it needs three layers: pendants or decorative fixtures above for the look, task lighting on the working side so staff can pour and read tickets accurately, and back-bar lighting on the bottle display, which is what actually draws the eye from across the room.
Pendant spacing over a bar follows the same logic as a kitchen island — 24 to 30 inches between centres, ends set in at least 12 inches from the bar ends. Height can be a little higher than over dining tables, around 32 to 36 inches, since people stand as well as sit.

Practical considerations a domestic project never faces
Cleaning. Fixtures in a food environment accumulate grease, and grease plus dust becomes a film that cuts output and eventually becomes a hygiene issue. Choose fixtures that can be wiped down easily and avoid intricate detail near a kitchen or open grill. Ask how the shade comes off before you buy fifty of them.
Replacement and matching. Buy spares at the time of the original order — ten percent is a reasonable figure. Ranges get discontinued, and a venue with three mismatched pendants over the pass looks neglected in a way customers register.
Running hours. A domestic fixture runs perhaps 1,000 hours a year. A restaurant fixture runs 4,000 or more. Rated lifespan matters proportionally more, and so does energy consumption, which is a real line on a monthly bill at that duty cycle.
Emergency and regulatory lighting. Commercial premises have requirements domestic ones do not — emergency lighting, illuminated exit signage, minimum levels on escape routes. These vary by jurisdiction and are not optional. They are separate from decorative lighting and need to be specified by someone who knows your local code.
Dimming and scene control. The ability to shift a café at 9am into a restaurant at 8pm is the highest-value feature in the whole installation. At minimum, put each zone on its own dimmer. If budget allows, a scene controller with two or three presets means staff switch between settings reliably rather than adjusting six dials differently every day.

One sculptural fixture over a bar or a communal table does more for a venue's identity than a dozen ordinary ones.
A specification checklist
- Zone the space and put each zone on its own circuit and dimmer.
- Dining 50–200 lux depending on format; café daytime 200–300; kitchen 500.
- 2200–3000K throughout, consistent across every fixture.
- CRI 90 minimum anywhere food or people are lit.
- Pendants 28–32 inches above fixed tables, shielded sources.
- Sit in every seat before sign-off and look for glare.
- Order ten percent spares at the same time.
- Emergency and escape lighting specified separately to local code.
